Cheesy Cauliflower Patties
- 1 Head Cauliflower
- 1 large onion
- 1 clove garlic
- 1 lg egg
- 1/2 -3/4C grated Cheese ( I use extra sharp 2% cracker Barrel cheese)
- 1/2-3/4 C Panko Bread Crumbs (start with 1/2 cup than add in more as needed at the end to adjust wetness)
- 1/2 tsp Cayenne pepper
Steam cauliflower, onion and garlic then puree in food processor till blended, add egg, cheese and bread crumbs. spoon onto a cookie sheet and bake. I put this in a plastic storage bag and cut off the corner to ‘pipe’ it onto a parchment-paper lined cookie sheet; pat to 1/4 inch thick ‘cookies’ then bake for 15-20 min at 425. No need to flip during cooking.

After posting this recipe I started experimenting with different cheeses. Once I tried using 3 oz of goat cheese in place of the cheddar I never looked back! Give the goat cheese version a try or experiment with your favorite cheese selection and let us know in the comments what is your favorite!
